I've Been Feeling Better

Living gluten free is not easy but the better I do at it the better I feel.


The bread you buy in the store sucks.  It's like eating dry wall, not that I have actually put peanut butter and jelly on dry wall (but if I did it would be like the bread you buy in the store).  So I bought a bread maker at Target and I now make my own gluten free bread and it tastes great and it's soft and fresh and it smells so good when it bakes.  You can buy gluten free flours at the store (rice, soy, brown rice, potato, etc.) or bread mix that is made from these gluten free flours.

I made homemade chocolate chip cookies from scratch using a gluten free flour mix that was listed as good for baking and it was wonderful.  Now I just have to find a good pizza crust recipe.

Chicago was tough but I'm very proud of myself when it come to the gluten.  The vendors all have food in their show rooms and we have lunch there and they take us out to dinner.  There's always cookies, pastries, pasta, sandwiches, etc.  I had salads, grilled chicken, veggies, etc.  We went out for Chicago style deep dish pizza one night and I got a little gluten-free pizza where they make the crust from sausage (in my case).  It was great.

So all in all I'm feeling much better.  It's nice to be able to say that!
