Homemade Appleton

Today has not really been a good day, but that is a different story.  I had dinner tonight with Eve and Michelle.  We were not able to get together at the holidays.  They both have kids and busy schedules and I went to Mexico the second week in Jan and Eve was in CA the 1st week in Jan, etc.

I worked with Michelle and Eve until a couple of years ago.  They are wonderful friends.  Michelle is from Jamaica.  Her mom still lives there.  She went to Jamaica to visit her mom for Christmas and her mom sent Michelle home with some homemade Appleton rum for me.  She knows I much I love it.  She takes Jamaican over-proof rum and puts fresh allspice berries in it and it sits there for a long time as the berries dissolve.  They she strains it.  Then she puts in fresh sugar in it and it sits there for a long time.  Then she strains and bottles it.  It's sweet and spicy and you sip it like a cordial.  It's very strong.  I love it and it's so nice of Michelle's mom to always remember me.
